Prawn Cocktail   
A typical seventies classic, but one in actual fact, can drop the historic baggage & if done right, can be a thoroughly tasty little salad.

I think the trick is to not mess with it, and understand that if you keep it simple, it really can be the delicious sexy starter it used to be.

Ingredients

Good quality Organic tomato ketchup
Good quality mayonnaise
A baby gem lettice
Prawns
Tobasco
Paprika
Cucumber
Lemon


Get yourself decent glasses, not the half bowl things your grandmother used to have, and get them in the freezer. Split up and chop up your baby gem hearts and whack into the glasses, along with the cucumber which you can dice. On top of that, pack with really nice fresh prawns, and in a seperate bowl, make up your Marie Rose sauce using two parts mayo to one part ketchup. A splash of Tabasco, and a good mix up & your done. Spoon over the prawns, sprinkle a little Paprika over the top, a wedge of lemon, and you are done.

Warm Bacon & Poached Egg salad

This is simple, healthy and delicious. The key is to make the bacon really crispy, and use a large free-range organic egg. The better you can make these two key parts, the better the salad will be overall.
Single free range egg
Good quality leuttice, romana, baby gem & coss ideal
Good quality butchers bacon
Salt & Pepper

    Get a nice bowl, and mix up your salad leaves and season with a little salt & pepper. Agrressivley pan griddle your     bacon. You really do need good quality bacon with little water content (non of your freeze-packed rot here) and
    lots of heat, to make it go really crispy, almost so its brittle. As your bacons becoming perfect, turn the heat off.

    Poach your egg, and spinkle the bacon onto the salad, a little bit of extra virgin olive oil, and sit the poached egg on     top! Awesome!
