Chilli Lobster Pasta...




Great Roasted potatoes is a science. Quite simply, you must prepare, prepare, prepare.

You will need at least:

Goose fat, Clemintine, Lemon, Carrots, Thyme, Basil, salt and pepper, and a nice deep roasting tin.

Par boil the potatoes, then plunge them into cool water to stop them cooking further. At this stage, rough up each potato with a fork on all sides. Dont just bounce them around in the pan. What your looking at doing is increasing the surface area and by agressivley scouring them, they will brown better.

Once done, heat up some goose fat in the bottom of the roasting tin until its spitting. Then, add the potatoes. Cover with olive oil, add seasoning including thyme, basil,the zest of clemintine and lemon plus lots of salt and pepper. Whack some veg in their like carrots and roast youself some amazing veg at the same time, Lovley!
